Gluten and Dairy Free Chicken and Vegetable Strata
Let’s face it, life can be stressful and healthy eating shouldn’t be one of those things that stress us out! I am all about having an arsenal of healthy recipes that are easy to make, and taste delicious, which is why I love this gluten and dairy free chicken and vegetable strata recipe. (Psst..it’s delicious even if you’re not gluten or dairy free!)
As a runner and a healthy food freak, I want to make sure I am fueling my body with nutritious foods that will help my body recover and feel great, without sacrificing flavor! And with my recent switch to a gluten-free diet, I found myself revamping some of my old favorite recipes to fit my new lifestyle.

This chicken and vegetable strata is one of my favorites for many reasons, but the clean and simple ingredients top the list. Vegetables help add bulk to this dish and the eggs and chicken sausage provide a healthy dose of protein to help with muscle recovery. It’s great for a leisurely weekend brunch or great served for dinner with a simple green salad.
Gluten and Dairy Free Chicken and Vegetable Strata
(Serves 6-8)
Ingredients:
4 large eggs
3 egg whites
2 chicken sausage links, fully cooked and chopped (I use Trader Joe’s Spicy Jalapeno Chicken Sausage)
2 cups spinach, roughly chopped
1/2 medium onion, chopped
1 cup red pepper, chopped
1 cup baby zucchini, chopped
1/2 cup low sodium chicken broth (gluten free)
4 slices gluten free bread, cubed
2 tsp. baking powder
Directions:
1- Coat one pie plate with cooking spray and set aside for later. Pre-heat oven to 350 degrees.
2- In a medium bowl combine eggs, egg whites, chicken broth, baking powder, and spices. Whisk until all ingredients are well combined. Set aside.
3- In a large bowl combine vegetables, chicken sausage, and bread cubes. Toss until well combined.
4- Pour egg/broth mixture over bread mixture and gently stir until bread cubes, vegetables, and chicken sausage are all covered in the egg mixture.
5- Carefully pour prepared strata mixture into prepared pie plate and bake for 40-45 minutes until strata is baked through and golden brown.
Other Recipe Tips and Suggestions
- If you’re not avoiding dairy, top the unbaked Strata with 1/3-1/2 cup of your favorite cheese. Parmesan and gouda are both delicious options.
- Sourdough bread makes a great stand-in for gluten free bread (about 2 cups cubed) if gluten is not a problem for you.
- Feel free to sub in your favorite veggies. Broccoli and cauliflower are both delicious add-ins.
- You can assemble the Strata the night before and simply bake when ready to enjoy. I suggest baking no more than 2 days after assembling.
